Zuzul Coastal Cuisine will host Slow Food North Louisiana for dinner service September 13. That evening, Chef-Owner Gabriel Balderas and Chef Roger Peterson will create a dish featuring the espelette pepper, listed on the Slow Food Ark of Taste, a registry of nearly extinct foods that are being identified and celebrated to save them.
Chef Peterson’s family farm, Learning Legacies, will be supplying the pepper, which grows well in our area.
